The Benefits of Coconut in All its Forms
I often get questions about the health benefits of coconut. Here are the ways you can enjoy coconut, and what it will do for your health:

Try it: Include coconut oil in a sweet tropical smoothie.

Coconut water is very low in fat, sugars and cholesterol, and high in potassium. Potassium helps restore electrolytes in the body, so coconut water is a great choice for rehydrating after a tough workout. Coconut water makes a great accompaniment to a post-workout Clean meal.
Try it: Drink coconut water as is, with a slice of lime on the side for tart flavor.

Coconut meat is taken from a mature coconut and used either fresh or dried in a number of dishes. A good source of fiber and manganese, coconut meat is good for a healthy digestive system, strong bones, normal blood sugar levels and even proper thyroid function. Make sure to choose unsweetened coconut meat to avoid added sugar.

PB & J Bars

Santa Cruz Organic® Products used in this Recipe:

Light Roasted Creamy

Ingredients:
•6 tbsp unsalted butter, softened
•1 cup Santa Cruz Organic® Peanut Butter
•½ cup light brown sugar
•1 large egg
•¾ cup all purpose flour
•½ tsp salt
•¾cup seedless raspberry jam

Directions:
•Preheat oven to 350° degrees.
•Spray a 9" x 13" metal baking pan with nonstick spray.
•Blend together butter, peanut butter, and brown sugar in a large bowl until smooth.
•Add egg and continue mixing.
•Add flour and salt and mix until dough forms.
•Reserve 1 cup dough for topping.
•Press remaining dough evenly in bottom of pan.
•Spread jam in an even layer on top of dough and then coarsely spoon drop reserved dough over jam layer.
•Bake 30 - 35 minutes.
•Cool completely, then cut into bars.
Makes 28, 2"x2" bars.
